Easy Peasy Potluck Pastries

Yesterday the husband and I were invited to a potluck that our neighbours were having.  I ended up postponing my Pampered Chef party to a later date which ended up being a good thing because I think I would have been too rushed to host the party and make something for the potluck!

My boss gave me a quick and easy appetizer recipe to try which sounded delicious and easy enough to prepare not ever even seen one or tasted one before.  I adapted it slightly to include some of the Epicure spices that I have which I thought would compliment the flavours. 

I wouldn’t exactly classify this recipe as very “healthful” but most of the time potlucks are usually “splurgy” kinds of occasions and since I’m the new girl on the block, I didn’t exactly want to show up with something that people would think was out of place!  Most people bring a main dish or dessert, so a rich and creamy tasting appetizer was just the ticket methinks.

Ingredients

  • 2 bricks of light cream cheese, softened
  • 2 regular sized Pillsbury Crescent roll dough cylinders (I bought the 33% less fat ones)
  • 1 can of “pieces & stems” mushrooms, drained & patted dry
  • Cheese, Chives & Bacon dip mix (to taste)
  • 1 egg
  • sesame seeds for garnish

Cream together the cream cheese, mushrooms & Epicure dip mix until well combined and set aside.IMG_5714IMG_5715

Roll out the crescent roll dough and then press together the perforated lines where the dough is intended to be broken off to make crescents

Gently give it a roll with a rolling pin to roll out as many of the creases as possible, then cut them into whatever size you would like to make the appetizers:IMG_5721IMG_5724

Spoon some of the cream cheese filling into the center of each square and then fold over each side and close the ends:

Lightly spray some parchment paper on a cookie sheet (I had to use wax paper because I was all out of parchment):IMG_5726

Place them on the parchment paper and then brush with a beaten egg:

Sprinkle with sesame seeds:

Bake at 350 for about 10 minutes keeping a close eye.  I noticed they were getting really brown on the bottom really quickly, so I ended up flipping them to brown them on the top.

The end result:

The verdict:  the assembling of them took longer than I had thought, but no big deal at all.   Given that I was experimenting with the Epicure seasonings, I only put in about 2 tbsp.  The seasoning was hard to pick out, so next time I would add much more!  All in all a very yummy and rich treat of an appetizer.  I bet these would be good experimenting with sun dried tomatoes & basil!

Oh and btw, I had never heard of these Anchor Hocking casserole dishes before, but my neighbour had used it many times before and was just putting it back into the oven to re-heat stuffed mushroom caps and the thing exploded in the oven!

If you're taking a dish like that from one extreme to the other (cold to hot), they tend to explode.

But if she didn't, definitely contact the manufacturer.

Those look great Ang and I agree, potlucks usually end up being indulgences :)

Oh and totally email them with pics. FYI - I have a set of their casserole dishes and have never had a problem though.

PS. I'm glad that you decided to postpone the PC party b/c I really wanted to go! It may even work out better for you now because you'll be having it closer to Xmas and people will be looking for gifts.

I use those dishes too but haven't had a problem. I did however, have a similar experience with my Pampered Chef casserole dish though :o(

I have a set of anchor hocking with plastic lids. One of the lids cracked within the first few times using it, so I called them and they sent me a new four piece set (and they told me to keep the original one too)! They seem to have good customer service so I would contact them. Besides, their logo says "best in repeat performance".

The potluck appetizer did look delicious...

I would seriously email them. I'm not sure heavy baking dishes such as that should be breaking in the oven.

Marie: it definitely wasn't one extreme to the other temperature situation because she was just re-heating the dish. What a mess it made!

Miz: really???? raw crescent dough?? Not even the cookie kind??!
