Comfort Breakfast & “Use it Up” Supper Salad

Hello oatmeal….it’s been a while…oh how I’ve missed thee…

It’s getting that time of year again.  You know, the kind where it’s absolutely beautiful outside, but there’s a crispness coming back in the air in the early mornings and when the sun goes down.  And what better for breakfast than oatmeal!!!  I heart oatmeal:

Today’s mix:

  • 1/3c oats, 1/2c unsweetened vanilla almond breeze,

  • 1/2c water
  • 1 small banana
  • 1/2 tbsp flax, 1/2 tbsp ground sprouted chia
  • pinch of salt, dashes of cinnamon, splash of vanilla
  • Toppings: 1 tbsp Chocolate PB2, sprinkle of unsweetened coconut, 1/2 tbsp mini dark chocolate chips, 1 tbsp toasted sliced almonds, 1 tbsp cashew-almond butter on the spoon

This kept me full for hours, so lunch was a cosmic cookie and a handful of mixed nuts.  I was running around the house trying to get our things together for our trip, so I didn’t photograph them…sorry!

Supper was “use whatever produce I have on hand” kind of night because hubby and I leave for vacation to Old Orchard Beach tomorrow for a week. 

I grilled up zucchini slices, red, yellow, orange pepper, red onion & white onion  all seasoned with Epicure garlic potato topper, S&P & spritzed with EVOO:

And I made a salad consisting of organic veggies: mesclin mix, baby spinach, arugula, cherry tomatoes, feta stuffed jalapeno & feta, drizzled the works with honey, fresh squeezed lemon & Kraft parmesan pesto dressing:

IMG_4964 Then I thought that the grilled veggies would be a star ingredient in the salad so I tossed them together:

and a grilled pork souvlaki…yummmmmmm….

We had our dinner out on the patio and a certain “someone” wasn’t far away giving us her best “don’t I get some” face:

Well bloggies, Hubs and I are off to Old Orchard Beach for the week! Yayyyy!!  But fear not, there’s Wi Fi and I’ll be a bloggin’ ';-)

Mmm the grilled veggies look great in the salad!

I LOVE Old Orchard Beach!! My husband and I went there one day but it was so crowded we couldn't find a place to park...but will go back someday much earlier in the day! Have a wonderful trip!

Coralee: I purchased it online. If you click on the link in the blog it will take you to the site. Some places in the U.S. carry it in stores and there's a retail locater right on the site. I think there's only one place in Canada where you can buy it in store.

Christa: tomorrow is the first official day of "off season" (read: Cheaper!) so hopefully the crowd will have died down a bit being after labour day and all. But I've never been there before! SO excited!

Have fun at Old Orchard Beach! It's been forever since I've been there but it's always a blast!! And Happy Anniversary, too!!

I think I'm going to have to have some oatmeal when I'm done with my workout.
