Epicure - opolis

Well in honour of a dear BFF Tasha, and that fact that she’s rounding the end of her Europe tour and just happens to right now be in Athens (aka easily my top 2 places in Europe to see with my very own eyes), I thought it was an appropriate time to give the Greek dressing mix I received from Epicure a try!  What better than with a homemade greek salad?

Here’s the goods:                             The Specs:

Put it in a jar:

Add EVOO:

Add red wine vinegar:

Put the lid on and give a shake:

Voila, perfect greek dressing:

I had all the fixings for a greek salad in the fridge and then some, including these organic tomatoes which were on sale.  I LOVE when organic produce is on sale.  No “notional” tomatoes here.

The Mix:

  • mixed salad greens
  • baby spinach
  • few leftover chicken strips
  • red onion
  • tomatoes
  • red pepper
  • green pepper
  • cucumber
  • feta cheese
  • hulled hemp seeds
  • chia seeds
  • Epicure Greek Dressing

Angie, How do the chia seeds taste? Also where did you find them?

Food Coma: chia seeds have no "taste" particularly, only a little bitty crunch. You hardly notice them. You can buy them at most health food stores and also at the bulk barn. You can buy them whole (as seeds) or you can buy them ground. They are bioavailable whole (unlike flax seeds).

holy Hannah!! I just had 16 posts to catch up on for you!!!! Sorry it took me so long to get "back into it"!!!

I don't even remember all of what I have to say!!

First of all, I think I would like to play tennis vs. your hubby when we visit...I am the tennis player in my house and i can't even play Danny because he usually has me running across 3 courts to catch the ball!!! Blast!!

um...I don't know what else I have...I miss you??? Can't wait to see you!!!!!

Oh and about epicure stuff!!! Where do I even start????
The Lemon Chiffon, WAY too lemony, try a smidge of cream cheese and some cool whip, it is WAY less tangy and much more palatable!!!
There is an AMAZING dip (I MEAN AMAZING!!!) using the 3 onion, cheese chives and bacon and lemon dill dip (which if you don't have lemon dill, you could use some dill plus a squeeze of lemon). You use 1 cup miracle whip, 1 tsp 3 onion, 1 tsp cheese and chives, 1/2 tsp lemon dill, 1 cup of shredded cheese (I usually use marble, or 1/2 cheddar, 1/2 mozza), 1 brick of light cream cheese and sometimes I mix a little sour cream in. Mix it all up and either serve it cold, or heat it in the oven at 350 for about 15 minutes....seriously this dip is referred to as THE dip. Like THEEEEEEEEEEEEEEEEE dip...your tummy will thank me!

You totally got me trying Epicure now!! I love the chili garlic seasalt and the Chili Lime Sansel. Wasn't too crazy about the dips so far, but can't wait to try some potato toppings!
