Chia, Cheese, Chives & Bacon Omlette

Haven’t had an omlette in AGES! I got a tip on a great way to use the Cheese, Chive & Bacon dip mix from Epicure by adding it to eggs. Perfect! I went a step (or two) further and here’s what when into my omlette:

  • 1 egg + 3 whites
  • 1/2 tbsp cheese, chives & bacon dip mix
  • 1/2 tbsp three onion dip mix
  • 1/2 tbsp chia seeds
  • and a spontaneous sprinkle of part-skim shredded cheese:

Served on top of two slices of toasted Ezekiel bread (which I burned again), two generious schmears of philly light cream cheese and a slice of tomato:

I’m tellin’ yas, the cream cheese ROCKS it. Lynn mentioned it a while ago and I thought “huh?” but I tried it and I think the general conclusion is that cream cheese rocks just about everything!

And btw, you don’t even notice the chia seeds in there at all! This was more of a “brunch” meal as it fell in the 8 POINT range, but it was entirely filling!

Holy freaking moly - my eggs NEVER turn out looking that good! my omlettes ALWAYS end up scrambled cuz I am a terrible 'flipper' ahahha

Your Epicure adventures really make me want to actually sell the stuff!! LOL

Haha! I used to eat Ezekiel cinnamon raisin bread for breakfast nearly every morning and I was constantly burning that stuff. Weird.

Curious about the whey thing too. It wouldn't have occurred to me that in straining yogurt you are essentially stripping away some of the nutritional value. How to use whey??? Mashed potatos? Soup? Add a few tablespoons to scrambled eggs? Puree it with a couple of heads of roasted garlic and use it for pasta sauce?
