Had a lovely BBQ with hubby which included some healthy and filling steamed green beans (one of my fail-proof favourite staples), zucchini boats (with garlic-cayenne goat cheese, tex mex cheddar blend cheese and Kraft Fig balsamic dressing) and BBQ’d pork tenderloin:
I only ate half and took the other half to work with me for lunch. It was the perfect lunch too.
And along side was a grilled slice of bread cut from a round loaf (white, I know), brushed with becel & minced garlic, sprinkled with garlic powder and grilled on the BBQ until toasted on both sides. Then I sprinkled a bit more shredded tex mex cheese until it melted. As if that wasn’t enough, I topped it with some of my homemade salsa (more to come on this) and some crumbled feta:

I’d say it was an excellent balance of lots of healthy filling veggies, lean pork tenderloin and a little indulgence with the cheese and white bread.
Afterwards I burned another 500 calories mowing the front yard this time so I think any minor indulgences were well earned!

Mmm, that bread looks fantastic! Well all of it does, but the cheesy, salsa-y bread is making my belly grumble. :)
Yay for Maritime bloggers!!! :D I was beginning to think I was the only one over here! :P I've been seen a few zucchini boats pop up in the blog world, I've never even heard of them until now. They look like a must try :)
