Finally I got to sleeeeeeep and wake up to my own devices and the
sun shining in the window. I looove waking up that way. I got up, brewed some coffee and spend some time catching up on some blogs while the rest of the house was silent. That is my favourite part of the week. I just love it when I’m the first one up, the sun is shining, there’s no TV on, just the smell of fresh coffee and my blogs :-)
After a little sipping, I decided on oatmeal for breakfast since it’s been a while I was craving it! Mmmmmm, how I’ve missed it!

- 1/3c oats, 1/2c unsweetened vanilla almond breeze

- 1/2 small banana cooked in
- 1 tbsp flax
- cinnamon, vanilla, pinch of salt
- Toppings: 1/2tbsp chocolate PB2, 1/2tbsp unsweetened shredded coconut, 1 tbsp toasted almonds, 1/2 tbsp mini dark chocolate chips & 1 tbsp cashew butter
- = the best bowl of oats I’ve had in a looooong time :-)
Around lunch time Farm Girl came over for a little “pre-packing” session and she experienced her first Green Monster! It was actually pretty light on the spinach because I was nearing the end of the container (I can’t believe that I plowed through one large container and one small container of baby spinach this week!)
It was the best GM to date (likely due to probably only 2/3 of the spinach I would normally put in), but our double batch consisted
of:
- 2 frozen medium bananas
- 1/2c frozen raspberries
- 2 1/3c unsweetened vanilla almond breeze
- 2tbsp salba
- 2 scoops tropical vanilla ultimate protein
- 2 tbsp cashew butter
- 21/2c spinach
Then little Baby J decided he wanted in on the Green Monster too:

Then it was a pack-a-thon. And I spend the next several hours packing. I didn’t make nearly as much progress as I had hoped. It looks like it will be a steady day tomorrow too. Before we knew it, it was nearing supper time and I snacked on some juicy and sweet cherries. They are SO good!
Next thing we know MIL pretty much had the entire kitchen packed up, so I dug around in the freezer to see what we could throw in the oven for supper for everyone. It ended up being pot stickers, little mini spring rolls and sausage rolls. While they had fries, I lightened my plate up a bit with some salad:
The salad was so good! It was mixed baby lettuces, carrot, yellow and red pepper, red onion, raspberries and goat cheese.
Now it’s a little R&R and back at it!

I adore kids...I think he would probably love it MORE because it's green hey??? whereas an adult is like "green??? not so much!!"
