Superfood Supper

Well it’s been more of a superfood day really!  I’m super proud of my day today :-)

I almost made it through the afternoon without a Snack and I was surprised because I held off on the morning snack as well.  Although I must say I was quite ready for lunch by 11:30 and I don’t normally eat lunch until 1:00.   So far the GM holds up strong to any other breakfast with staying power that I usually have.  I might just make this entire week a Green Monster for breakfast experiment week.

I decided to dip into my strawberry stash for a small snack so as to not dip into my calorie allowance for the day too much:

I wasn’t quite sure what Supper would entail, but I knew it would involve those collard greens I bought the other day.  I hadn’t had halibut in ages and it was on sale at the grocery store so it was a done deal.  I just sprayed with with some EVOO in my Misto, seasoned with S&P and baked it in the oven.  I had some of the sauce left from the salmon burgers from the other day, so I doloped a little on top even though it would have been delicious without it.  For a side dish, I cracked open my Cut n’ Clean Greens and sautéed them with peppers, onion and mushroom, canola oil and garlic:

The fish was delish, but I didn’t enjoy the greens so much because I threw in too much Kale.  I’m not really a fan of kale, but I buy it every once in a while now because it is a super food and it’s good for you.  I love the rest of the greens in there though!

Now it’s off to massage therapy…

Mmmm, the halibut looks really good!

Do you avoid carbs with dinner? If I don't have rice or pasta or something, I feel like I didn't eat anything.

Lainey: my whole life supper always included a major carb, but it has been the past year that I'm starting to move away from "needing" to have a carb with my supper (rice, potato, pasta, couscous etc.) I am currently working with just staying within my calorie allowance first and foremost and if that means including carbs at supper, I have no issue with that. I'm starting to feel satisified without having it, and it's all in what you're used to.

Hey, because of your pic's of your oatmeal, I've started eating it! I used to hate oatmeal! I never thought about adding stuff to it....the toppings and such. Anyway, I gave you some blog love in my post this morning. I really love reading your blog and have been catching up on previous posts. You do a great job! Thanks!

I spray my kale with Pam and then season it and then bake it. We eat these as "chips" and my family loves it!
