Mmmmm Coconut Milk Ice Cream!

Cockadoodle-dooo!  I know for a fact now that these Green Monsters are making me feel so energized in the morning.  I wasn’t sure last week if it was the GM when I felt like I was bursting with energy and smiles on my way to work  because I was so excited about my trip to Toronto, but now that I’m back and still haven’t caught up on my sleep, but am still getting these bursts of energy by around 8:30, I know it’s gotta be the GMs!  Today’s combo was the same as yesterday except I sub’d cashew butter for peanut butter:IMG_3113

  • 1 small frozen banana
  • 1c+ unsweetened vanilla almond breeze
  • 1 tbsp Salba
  • 1 scoop tropical vanilla protein powder
  • 1 tbsp organic cashew butter
  • 3c organic baby spinach

I heart cashew butter :-)

 

I started getting hungry around 11:45, but I held off until 1:00 when I met Brooke and her work friend at Local Joe’s Cafe & Market for a ham & swiss sammie on whole grain bread and coffee:

It was delish!  So delish that Brooke somehow managed to fly a piece of ham and cheese into her coffee! lol

I had a peach and yogurt planned for an afternoon Snack, but I IMG_3117wasn’t feeling hungry so I let it go.  I then stopped at the grocery store on the way home to pick up a parcel at the post office and I picked up some raspberries because they were on sale.  My tummy was rumbling by then BIG time.  Then I end up waiting for the postal lady who was no where to be found, and I ended up snacking on a container of fresh raspberries while I waited.  These surprisingly do satisfy me.  It must be the sweetness and the fibre, but it’s surprising since it’s only a small amount of food.

Supper tonight was leftovers from last night.  It was a combination of roasted garlic broccoli and balsamic Brussels sprouts with roasted pork tenderloin:

I’ve been admiring it from a far on the American blogs forever and they just got it here at Planet Organic and I’m tellin’ ya, it’s the ice cream form of the coconut Liberte yogurt!  It’s organic and made from coconut milk instead of dairy.  I absolutely love it.  They have other flavours too and the chocolate is great.  The NI is similar to any kind of regular ice cream.  There’s about 170 cals per 1/2c, so it’s not on the “low” side, but at least the ingredients are natural and organic, so if there’s going to be a treat involved, I’d swap this in a heartbeat.  Again, it was quite expensive and you only get a pint, but that’s more reason for me to use restraint and moderation!

OOOOH that all looks so yummy!!!!

I am certain that I would heart cashew butter too...but I can never find it...I think I saw it at whole foods right before I was feeling sick! NEXT TIME!!!

Cool! I had no idea SOdelicious products were organic? Maybe only the coconut milk line?

And wonder if Whole Foods here in TO has any in stock. Mmm... coconut.

The brussel sprouts look really good. Much better than the way I make them!

That ice cream sounds really good. I'm gonna have to try it.

I have been looking for So Delicious Coconut Milk and Coconut Ice Cream ever since I saw them on Jenna's blog. It'll probably take years for them to show up in the stores around here. :(
