Another quiet morning this morning with no TV which I got to spend just sitting on the couch with my Dad and Hubby. I like it when the TV’s not blaring on the weekend mornings. This morning’s coffee actually had a few coffee oils settled on the top and that’s the first time I ever noticed that.
We sat around chatting etc., and I didn’t end up eating Breakfast until around 11:00 and I couldn’t get yesterday’s oatmeal off the brain, so I had to take advantage of the extra time and made another fantastic bowl of oatmeal the same as yesterday:
The afternoon was really slack and I didn’t get any packing done at ALL today :-S It was a lazy day just hanging out with the fam. I made a trip to the grocery store to replenish my GM ingredients stash and some fresh produce for the week and then it was time to get ready to BBQ for our father’s day supper. We were getting pretty hungry since it was nearing supper time, so hubby threw some “appetizers” on the BBQ which was the last package of “alhouettes” his mother brought back from her trip to Sept Isles in the winter time. They were definitely reminiscent of his days growing up in Labrador and were SOOOO goooood! They don’t look like much, but they are good!
I’m pretty sure I’ve blogged about them before but they are basically thin slices of beef rolled up with bacon and slices and held together with a toothpick = amazing!
Soon enough after we had Supper and we BBQ’d just about everything under the sun. There was steak, pork chops, pork tenderloin, eggplant and zucchini boats (made with kraft balsamic fig dressing and goat cheese which were AMAZING!!!!). There were also mushrooms & onions, baked potatoes and steamed beet greens:
I ate half of the baked potato topped with cottage cheese, some pork tenderloin, a little piece of steak, little bit of onions & mushrooms, steamed beet greens, 2 zucchini boats. It was all great and I can’t tell you how great the zucchini boats were with the Kraft Fig Balsamic Dressing and goat cheese. The sweetness from the dressing was perfect with the goat cheese – YUM!
Then it was dessert time! We had a father’s day cupcake “cake” which strangely had black frosting (weird). The “frosting” dyed our fingers and teeth!
And MIL made mini boston cream cupcakes which I had to indulge in because they are awesome:
Now it’s getting things ready for the week and maybe back a few more boxes and it’s down for the count!
