I swear I let the last 3 get over ripe! I need a plan for this avocado all ready for the precise moment it's ready....lay it on me peeps, what should I do with it?
I let my last bag of avocados go bad too (why do I insist on buying a bag? because it's a better deal than buying 1 at a time, yeah, that makes sense, then I use one, let the rest go bad!)
Anyway, the only thing I like is guacamole. I don't have the patience for anything else with it. I have to squish it out, I can't peel and cut it up. I make easy guac, just an avocado or 2, 1/2 an onion finely chopped, tomato chopped up, squirt of lime, bit of garlic. That's it! let it sit together for a bit and consume! YUM! But not the best when the thing that tastes best with it is tortilla chips...
I have avocado envy! I'm allergic to them (VERY MUCH). I used to put them on sandwiches, pizza, inside of wraps, make dip with it, etc. There were no limits. :(
Lately I've been eating a super delicious salad with spinach, tomatoes, alfalfa sprouts, crab meat, and avocado. Oh, and sometimes about a half cup of brown rice for bulk. I make the dressing from olive oil, balsamic vinegar, and a bit of limejuice. YUMMM.
Here's a tip if you only want half - leave the pit in the half you put back in the fridge and it won't go brown as soon. Also, some lemon juice prevents the browning too :)
Avacados are deee-lish. I love making guac too. I puree mine and then add salsa - a little bit of salt and voila!! Gourmet, I know. . . but it's tasty. I have also found some organic baked tortilla chips that are 2 points for 18 chips which makes a tasty little treat where I don't feel like I'm being cheated!! Yummy!
Mmmm....avocado... Sliced in a wrap with turkey, dijon, spinach, red onion... Guac - mashed avocado, fresh lime juice, garlic, salt and pepper. Optionally you can add some diced tomato and diced red pepper to make it chunky... Cobb salad - avocado, mixed greens, sliced chicken, hard boiled egg, bacon etc. Now I am HUNGRY!
I love to chop them up and just eat them plain. I also have sliced them and put them on sandwiches/veggie burgers and if you mash them, you can put them inside burritos before you bake them. Enjoy!
Yup, I love them with veggie burgers & on the side with burritos. The most unusual one I saw was GRILLED CHEESE & AVOCADO sandwich-sounds YUMMY! Of course great with salads.
Avocado adds great creaminess to smoothies, but I feel their deliciousness is wasted there somewhat. Have read about some delish salad DRESSINGS made with avocados-must try soon :)

I do the same- I often let them get over ripe before finishing mine.
Guacamole is a good option!
Inside salads they are super good!
I often just peel (cut in half and scoop out with a spoon), pit and slice up an advocda and eat it by itself as a snack.
I also put it on sandwiches, wraps, basically anything Mexican, salads . . . the possibilities are endless!

1) Guac! I can show you how to cut it up and have a grrrrreat recipe. :)
2) Last week I tossed avocado chunks in my salad with greens, strawberries, cheese and a honey/olive oil dressing. Yum!!!
3) Turkey sammich or wrap. There's something about turkey & avocado that I love.
4) Mash with lime & salt and use as a sammich spread.
If you make guac, save the pit and put it on top of the dip. Also, push the plastic wrap right onto the dip to keep air out.
Eat half of it sliced with salt, and it's yummy. Eat the other half, the next day. Also, I love avocado as spread on a tomato and cheese sandwich.

I say make guacamole! You can use it for dipping, topping for burgers and sammies or as a dressing for salad :)
Mix it with tomato sauce to make a very yummy and filling salad or steamed veggie sauce.
