I never met an Amy I didn’t like

Another beautiful and sunny morning to wake up to today and it felt great!

I started off the day the same way I did yesterday with the best bowl of oatmeal ever. Everything about it was perfect and it was cooked just right:

The mix:

  • 1/3c oats
  • 1/2c unsweetened vanilla almond breeze
  • 1/2c water
  • 1/2 banana chunked and cooked in with the above
  • pinch of salt
  • tbsp of flax meal
  • splash of vanilla
  • dash of cinnamon
  • splash of sugar free cinnamon dolce syrup
  • 1 tbsp chocolate PB2
  • 8g toasted sliced natural almonds
  • a few chocolate chips
  • 10g almond butter on the spoon

    It was so lovely outside that I had to of course take Lucy for a walk. I was all excited to listen to some Jilian Michael’s podcasts on my walk (thanks Jeni!) when I realized that I didn’t have my iPod! pfffft! Minor glich though since it was a beautiful day, so I just enjoyed the sun and the walk. It wasn’t super long, only 30 mins, but was great still.

    As usual, my morning breakfasts fall a bit later than usual, so by the time Lunch rolled around I really ended up with two snacks throughout the afternoon instead. I took the opportunity to enjoy my favourite Larabar, the Coconut Cream Pie one:

    And I had a bowl of Mocha Liberte No Fat Probiotic Svelte Yogurt topped with some drizzly chocolate PB2, a few crumbles of granola clusters and a few sliced almonds:

    And then hubby and I had an appointment and I snagged a handful of sweet & savory trail mix on my way out:

    After we got home, I bonded with Jillian and the girls and got shredded even though my quads are questionably sore. I can’t remember the last time they were worked this hard. Man I am SUCH a wimp! It’s only level 1 for crips sake! Ah well, I feel fan-friggin-tastic ever since I started doing it. I feel firmer all over and feel slightly “buffish” too :-D

    For Supper this evening, I decided to try one of the Amy’s Spinach Feta in a Pocket Sandwich. It was SOO good! So far so good with the Amy’s products that I’ve tried so far. I got all vege-fied with the side dish and I am so used to eating all of the leafy greens now that I don’t even think twice about it. It wasn’t that long ago that I had never even eaten kale, or chard or bok choy and now I’m eating something of the sort every single day just about! I’m sad that I missed out on them all of these years! They are so easy to cook and eat! I sauteed some red onion, zucchini, mushroom and prosciutto in some EVOO and once browned and tender, added a few handfuls of red swiss chard, kale and fresh spinach and let it all wilt down. I also added some minced garlic and S&P and a sprinkle of crumbled feta at the end. Two feta stuffed pimento jalapenos were the perfect way to top it off:

    And it was so good!

    And now the clock is ticking and I have to get my buns upstairs to get my lunch prepped for tomorrow! It never ends does it?!

    Oh and I just wanted to say………………….

    I'm looking forward to getting my butt kicked by the shred video... it should be here by mid-week, next weekend at the latest. YAY! Just hooked up the new dvd player in the basement and I'm ready to go.

    I can't tell you enough how much I enjoy reading your blog every day. You have such wonderful ideas and I get lots of great ideas from you to try. I am now not scared to try odd things together and mix and match foods. Your a wonderful lady with lots of inspiration and positive attitude. GO A TEAM!!!!!

    Thanks for oatmeal link on forum.
    Still wonder approx how long you cook it for...5 minutes....longer?
    I noticed the large flake oats at PO in bulk say to cook 20 to 25 min!!So long-do you do that?!
