Saturday & Sunday Recap

Okay bloggies! All of this crazy BLBE shenanigans has caused me not to have time to post my meals! So here's a recap of Saturday and Sunday eats.

Saturday we went out for Brunch at Cora's restaurant so I allowed myself a little sleep in time in the morning and sipped on my regular cup of coffee with blend cream and sugar free cinnamon dolce syrup:

I was torn between a breakfast item or a lunch item from the menu and I decided on Lunch since it was about noon time anyways. This menu always has me undecided because everything is so bright and beautiful :-D I decided to have the smoked salmon on a Montreal bagel. It had cream cheese, smoked salmon, capers, red onions and tomato. It came with a huge side of fresh and beautiful fruit:



I ate most of it, but saved the grapes and watermelon for a snackipoo later on. How could you not eat most of the fruit with you've got this chocolate hazelnut sauce to dipperoo in? :-D:


Then following that, hubby, MIL and I ventured out for a visit to one of their cousins house. Before we knew it, we had gabbed on for so long it became close to Supper time and they had whipped up a delicious meal of sweet & sour meatballs, rice and bread:



And then there was Dessert. It was a very good compromise on divine indulgence and smart choices. It was a spoonful of strawberry ice cream with a side spoonful of exotic source yogurt, along side of a Weight Watcher chocolate bar thing that I had not seen before, but am definitely going to buy (1 POINT each) and drizzled with a fancy yummy chocolate raspberry sauce. This was all a very reasonably small portion. I had it with a perfect cup of tea:

For the rest of the night I was glued to the puter trying to keep up with all of your lovely sign up emails and I nibbled on some sort of buffalo chicken bite thing that hubby had made when I went up for some water. No picture, unfortunately :-(

Moving on to today. Well today was not a challenge for me on the snacking front because I spent the whole day at the computer getting our new BLBE challenge organized! I did manage to get 3 square meals in though and they were de-lish.

Breakfast was a my favourite delicious bowl of oatmeal consisting of:
  • 1/3c organic oats
  • 1/2c unsweetened vanilla almond breeze
  • 1/2c water
  • 1/2 medium banana chunked and cooked in the oats
  • pinch of salt
  • splash of vanilla
  • dashes of cinnamon
  • 1 tbsp ground flax meal
  • 2 tbsp chocolate PB2 constituted and drizzled on top
  • sprinkled with 8g toasted walnuts

Lunch today was using up the rest of the Italian ciabatta bread and new years turkey. So I made a delicious sammie of ciabata, turkey, light mayo, cranberry & pom brie topping & spinach. To go with it, I had the left over fruit from Cora's:


MIL came over this afternoon with a cooked roast in tow, so I was lucky to have that all ready :-D I steamed up some frozen mixed veggies, topped it with some becel, S&P and I was good to go:

There was Dessert which I declined :-) It was another cheesecake! I told hubby that I saw it fall in the toilet and that I'd have to pass (the things we say to ourselves to stay away! lol). It didn't stop him for some reason :-D

If you have some meat left, I love using the leftovers on a sandwich. French baguette, arugula swiss cheese and dijon mustard go super well with beef!

LOL!!!! Cheesecake in the toilet! I'll have to remember that visual picture whenever I want to have some decadent dessert!

Thanks for all your hard work on the BLBE! I signed up, then freaked out that I signed up, but now I have moved on to being really excited and stoked!

Ohhhhh my goodness I loooooooooooooove Coras! BF and I go there wayyyy too often, but it is sooo scrumptious!!

Cora's is AWESOME! I love their big fruit platter that they have. Deee-lish! :)
