Monday 2009

Today was the first day I realized that it truly was 2009 :-) It's exciting! 2009 holds lots and lots of good things for all of us, I just know it.

So I had a bit of a later night last night, keeping up with you fine folks of the BLBE challenge ;-) so I was a tired girl this morning and used up an extra snooze or two. So, to make up for time, my Breakfast was pretty quick. I had a toasted Weight Watchers bagel, PB2 and a half of a sliced banana with my regular morning coffee with blend cream and sugar free cinnamon dolce syrup:
I started to get hungry around 10:30, but I held off until lunch time because my Lunch was going to be pretty satisfying. For lunch I took Work Hard, Eat Well's advice on the leftover roast beef idea and made a baguette sammy. But I had no arugula or swiss, so it had spinach and horseradish. I skipped the cheese even though I had tons in the house because I wanted to save a POINT. It was sooo good :-) I love hearty chewy breads! To go with it I had some vanilla Liberte No Fat Probiotic yogurt topped with some runny chococlate PB2 and pom seeds = divine! I loves it! Oh and while trying to do a balancing act with my sammy on the edge of the yogurt dish, yes, it fell in. So it was kind of a "Beef dip au yogurt" :-D:

I was happy to have a honeycrisp apple for an afternoon Snack because I just love them!

I had my massage therapy appointment right after work before going home. By the time I got home I was soooo hungry! Hubby had some shake n' bake chicken going into the oven so for Supper I whipped up some linguini smart pasta and sauteed: shallots, garlic, red swiss chard, fresh spinach, cherry tomatoes and mixed them with the fettucini, 1/4c light ricotta cheese, basil, S&P and a little splash of pasta water to make it nice and creamy. I topped it with a small piece of hubby's chicken. It was soooo goood:

Okay cover your eyes for the faint at heart! I ate a tiny bit of the toilet cheesecake :-S You know, the cheesecake that MIL brought over last night that I had convinced myself had fallen into the toilet? Well apparently that mind game had worn all off cause I had an itty bit of it.


It was a tiny tiny cake. But hubby and I agreed that it was going in the garbage after that. It was good, but not the best I've had.

Time for me to get myself ready for beddy byes my lovely bloggies! Have a wonderful night :-D

Knowing you and your love a POM, I bet the "fall in" was more like "dipping" in the POM :)

MMMMMM you totally reminded me that I have a pomegranate in my fridge that would go REALLY nicely with some liberte yogurt I have!!!

AND a beef sandwich with horseradish sounds like heaven to me...

Your meals look sooo good! I really need to take more time preparing my meals. That may be a goal that I work on after this 6 weeks of goals are up! :)

I can't get enough of the pom this year. It's one of my favorite things to snack on. And that sandwich looks delicious! Wish I had thought of that with my left over roast beef I ate last night!

Your pasta looks delicious! I need to go grocery shopping....I have nothing in the house, and that always makes it hard to stay on track....I'm doing well though, really well so far in prep for the BLBE2! I'm so exicted!!

I wish I liked beef because I wanted to lick my screen staring at your sandwich!! Yum!
