It's Over and Done!! Pheeeeeeeeew!

Well happy new year to yas! We are majorly snowed in here in Nova Scotia let me tell yas! I didn't wake up until around 10:30 (after staying up until around 2) and I had an awful sinus headache/migrane and a bad stomach to go with it. I brewed a cup of coffee to sip on until I felt better and I couldn't even drink it for about another hour or so. Brutal! My sinus are all tender and swollen :-( I have yet another doctor's appointment for Thursday. Anyhoo, here's my 1 POINTer coffee with blend cream and sugar free cinnamon dolce syrup:

Then when my tummy felt rumbly and I started to feel better, I whipped myself up a bowl of banana flaxmeal, vanilla oatmeal with chocolate PB2 made runny to drizzle all over the top and topped with toasted walnuts for 5.5 POINTS:

Mid-afternoon I got hungry again and I made this delicious ham & cheese sammie on Italian ciabatta bread for 4 POINTS. It had light mayo, dijon mustard, lean cooked ham, light cracker barrel cheese cute into thirds and fresh spinach:



And for Supper today we braved the crazy weather and high snow drifts to go to MIL's house for our final big dinner of the holiday season, another turkey "jiggs" dinner. All the trimmings included: turkey, salt beef, peas pudding, turnip, carrots, cabbage, stuffing, mashed potatoes and gravy for about 12 POINTS. I had about 4 POINTS worth of "extras" not pictured here:


And here's my final dessert indulgence for a long, long time. MIL made an incredibly delicious homemade cherry cheesecake for about 5 POINTS:

And there you have it, it's all done, all of it, all of the big dinners are said and done. I did confinscate the leftover turkey carcass to make more delicious turkey soup. It's on the stove simmering in a pot with bug hunks of onions, carrots and celery, fresh savory, fresh thyme, fresh rosemary, dried bay leaves, salt, pepper and some cabbage that was in the fridge. I'm going to let it simmer all evening on the stove and then strain it and put it in the fridge. I will probably freeze the broth for when I want to make some turkey soup sometime in February. I already have some frozen turkey soup from the pot I made at xmas, but I couldn't let perfectly good leftover turkey bones go to waste!

I'm so glad the holidays are over as well!! Too many special goodies this time of year.

Cheesecake is ok anytime in my books, hers looks awesome, mmmm :)
