Inaugural Eats

No big surprises on the Breakfast front this morning :-D .  I mean it is inauguration day after all, so I had to make sure to start the day off right!  Same combo of late:

  • 1/3c oats
  • 1/2c unsweetened vanilla almond breeze
  • 1/2c water
  • 1/2 medium banana chunked and cooked in with the above
  • pinch of salt
  • 1 tbsp flax meal
  • splash of vanilla
  • splash of sugar free cinnamon dolce starbucks syrup
  • dashes of cinnamon
  • 2 tbsp chocolate PB2, constituted with water to be a bit runny to drizzle all over the top
  • 8g toasted walnuts sprinkled on top
  • 6g toasted unsweetened coconut chips sprinkled on top
  • With my cup-a-joe with blend and sugar free cinnamon dolce syrup:

    Since it was inauguration day, and it was one of those events in history where you can tell your grandchildren “I was ….. during the inauguration of the first American black president” I decided to eat my Lunch at my desk and watch it live on the internet.  I sort of felt it was almost appropriate to watch it on the internet rather than on TV.  It’s a new era in our world and it clearly represents change, so what better way t0 participate in that than watching it on the internet, right?

    Lunch was sooooo goood!  A while back I made a similar variation of Roni’s Southwest turkey burgers and used her suggestion about freezing them after they’re cooked.  I had two leftover last time and wrapped them up and froze them.  I grabbed one from the freezer, grabbed a foccocia bun, a handful of arugula, some of Pete’s Frootique salsa and a dolop (or two) of fat free sour cream.  I also had an individual sized Liberte organic skim milk which I also found at Pete’s:

    As you can probably guess, it was absolutely delicious and the frozen pre-cooked turkey patties froze soooo well!  You could hardly even tell they were leftover!

    I had a hair appointment really soon after work, so I didn’t have much time to cook, so I improvised and came up with a deliciously filling and low POINT hearty meal!

    The mix:

    • EVOO
    • 3 inches of zucchini, cut into 1/2 moons
    • 1-2 handfuls of pre-washed/cut stir-fry mix from the produce section
    • 2 handfuls of cut and washed swiss chard and bok choy (I have all the greens stored in the same produce saver Tupperware container in the fridge (more on that below)
    • half a can of cherry tomatoes (I just discovered that you can buy these in a can)
    • 1/4c light ricotta cheese
    • about 4 oz of leftover frozen turkey from xmas, thawed
    • 1 package of Smart Ones 3 Cheese Ziti, thawed in the microwave and added at the end to combine
    • sprinkle of fresh parm on top.

    This made two servings, so I’ll have the other half tomorrow for lunch!  Each serving is still only about 6 POINTS just like the original package of the frozen Smart Ones entree would have been to begin with, only not nearly as satisfying!  I whipped this up in less than 10 mins.

    Then I enjoyed a cup or so of fresh strawberries for dessert:

    I wanted to tell you guys about these containers.  I bought them at Wal-Mart and they are made by Rubbermaid and they are for keeping fruits and vegetables.  It comes in a set of 4: 2 small, 1 med and 1 large.  Each one has this little plastic grate that goes on the bottom that allows the produce to sit on top and away from any moisture that drips down, keeping them dry:

    The lids have these little holes on the side to let the air and moisture circulate:

    They seem to work really well!  I use the huge container to keep all of my greens in.  I have it packed up with fresh spinach, red swiss chard and bok choy all washed and cut up and ready to use.    They’re great because sometimes I can get a little “produce happy” while grocery shopping and end up having way too much for just me to eat in a run of a week, so these definitely give me a longer life in the fridge :-)

    When I got home from my haircut, I fixed a nice cup of gingerbread spice tea:

    I have those containers! But I bought mine separately, and I only have the small ones and medium (I pack it with a salad for lunch). The small ones aren't really doing what they're supposed to for me, because I through all my lunch in a big reusable shopping bag to take to work, so it gets tossed all upside down etc. Same with the medium one with my salad. If I had a huge one it would work better probably. I guess I could also keep washed grapes or whatever in the medium one in the fridge, it would work then. I'll have to look for a huge one now.
