On a PB2 Mission...

Okay so I'm now on a PB2 mission. I want to slap myself for forgetting I had it in my cupboard all of this time. I already had my morning coffee this morning for breakfast before I thought of how amazing a tbsp of PB2 would be in it! So, tomorrow that is my plan, to have some PB2 in my coffee. My Breakfast this morning was not the breakfast of champions that it normally is and it has to do with this biscotti that I've had sitting there waiting for me to eat for ages. I kept my word and it was still sitting there waiting for me to work it into my day so I decided to have it for breakfast dammit! And since I wasn't incredibly hungry from my full belly from last night, that's just what I had. The coffee with blend cream, sugar-free cinnamon dolce syrup and this Caramel Mocchiato Biscotti was a 5 POINTS:
Then I put my PB2 cap on and decided I had to have my oats for Lunch so I got out my blender and put in:
  • 1/3c oats
  • 1 tbsp PB2
  • 3 egg whites
  • 1/8c sugar-free cinnamon dolce syrup
  • 1 tsp cinnamon

and I blended it all up and cooked it in a non-stick frying pan which I sprayed lightly with EVOO in my Misto (more on this another day), and made a PB2 cinnamon dolce pancake for 3 POINTS! Now I have to say that I will play around with it a little and maybe leave out the cinnamon next time because I think that the cinnamon from the syrup & the added cinnamon may have over powered the peanut butter taste, so next time I'd leave out the cinnamon and I bet you could throw in a 1/2 of a mashed banana and only 2 egg whites and that would be good too........I'm now on a PB2 Mission!

So to go along with my pancake, I mixed up a 1/2 serving of Liberte No Fat Probiotic Vanilla Svelte yogurt (about 85g) with 1 tbsp light cool whip and doloped it on top of the pancake with a few raspberries & blueberries and had it along side the tropical fruit salad I made yesterday with the remaining yogurt combo that I didn't put on top of the pancake for another 4.5 POINTS:

The pancake was good and completely balanced and healthy:

But like I said, I am going to play with the ratios and ingredients a little and check out the website more because there are already a few great sounding recipes there too.

So I'm posting my daily menu right now because tonight is hubby's company xmas party and I am feeling well enough to go I think. It is going to be so strange being "the boss' wife" lol Anyway, chances are not good that I'll be able to take pics of my food since the others there will likely think I'm nuts, but I know what I'm having from this menu:

Starter: Spinach salad; strawberries, goat cheese, almonds & champagne vinaigrette

Entree: Cajun blackened 6oz. salmon fillet: lemon risotto, mango jalapeƱo salsa

Dessert: Blueberry crumble; served with walnut ice cream

It should be a good time, so now I'm off to get a shower and get ready and yes guys, I will post a pic with my new haircut ;-)

I'm almost embarrased to say that I never heard of the powdered pb until today...boy, was I missing out. This will be my next online purchase!

Yes, sometimes taking pictures of food = crazy...especially when are the bosses wife tonight (how cool is that???)

The pancake sounds yummy. I'll have to try it. I've been experimenting with protein pancake recipes lately. Here's one I tried yesterday (it makes 10 pancakes): 3/4 cup light cottage cheese, 1 tsp pumpkin pie spice, 2 tsp honey, 1/2 tsp vanilla, 3/4 cup steel cut oatmeal, 3/4 cup canned pumpkin. Mix it all in the blender until well blended then cook them like you'd normally cook pancakes. I topped them with a light sour cream/sugar-free syrup/cinnamon combination. Each pancake is only 1 point (not including the topping).

i was thinking of you when I saw the Superstore flyer this week. First thought in my head was "I bet Angie will be stocking up on berries this week" LOL
