I aint 'fraid a no veggie

I have been lacking in dairy lately it seems, so I opted for some good ol' Sunny Crunch Muesli with fresh raspberries and skim milk (sorry Randi, cover your eyes for a second) and a cup of joe with 1/4c of light egg nog! Bionic got me into it, so I gots me own misto now ;-) Breakfast in total was 7 POINTS:


And this morning, I did start feeling the rumbly tummy before lunch time so I did have a morning Snack of a delicious honeycrips apple for 1 POINT:



I didn't want the other half of the can of Healthy Request New England Clam Chowder from yesterday go to waste, so for today's Lunch I had the other half of the can, plus the leftover salad from last night's supper which was mixed greens, red onion, craisins (not many) and a clementine for a measly 3 POINTS. I had one of those mini cans of Coke Zero to have with it (it's just the right size for me), but I started not feeling well around that time and a headache was already setting in, so I didn't want to chance it with the aspartame, so I didn't drink the pop:



I was sooooo full from the salad at lunch, even though I didn't finish it entirely, so I wasn't hungry for an afternoon Snack until I got home. I debated on whether or not to skip the snack since supper was about to be made and then have a snack later on, but by this time I was feeling pretty hungry (and sickish), so I had my snack afterall. Last night I made a batch of Roni's Really Quick Spicy Bean Dip for snacks this week and I had that with 25g Guiltless Gourmet Chipotle tortilla chips and a dolop of fat free sour cream for a total of 4 POINTS:



YUM!


And for Supper tonight I made Salmon Cakes with Fiery Bell Pepper Salsa and I did all of the prep for it last night. I made the salsa and I made the mixture for the cakes and just kept it in the fridge. But when I went to make them tonight, they hardly would stay together as "cakes" at all! Out of 8 cakes, I think I got the last two to stay together. BUT they were good and I will still enjoy the leftovers as a salmon scramble of sorts. To go with it, I decided to venture where I had never ventured before.....Green Chard! For years I was always afraid of those kinds of greens I had never heard of and wasn't quite sure how to cook. But then I thought, why in the "h e double hockey stix" should I be afraid of a vegetable. Worst case scenario is that I it doesn't turn out and I don't like it, right? So as it turns out, it was awesome and it was all very bright and pretty and all for 6 POINTS:



I know, right! If my old self could see me now! lol For the chard, I sauteed a chopped shallot in 1 tsp EVOO and 1 tsp minced garlic, then I dropped a handful of sliced leeks and sauteed for a minute or so, then I dropped a few handfulls of the green chard (half the bag) and sauteed for a few minutes until it was wilted down. Then I seasoned with S&P and voila! IT WAS DELICIOUS! Waaaaaaay better than I expected. I was soooo surprised. It was kind of chewy, but I liked the texture. I liked it more than the kale that I made a little while ago.


I bought a pre-washed and cut bag of Green Chard and they also had the bags of pre-washed and sliced leeks at the grocery store too, so it was a perfect quick and easy way to experiment with vegetables that I'm not used to cooking with. I discovered the pre-wash leeks in the summer time when I was eating a lot of scrambled egg combos and it was perfect when I made that Green & Bacon Soup too. If you have no idea what I'm talking about, here's a shot of the bags:


And as per usual, I needed a little something sweet and I had two of these little Russell Stover No Sugar Added chocolates for my last POINT:


So, I'm spot on today bloggies! I hit my 22 POINT target exactly and I'm completely satisfied. Tonight I plan on having a nice hot cup of the Tetley Pomegranate Green Tea (with a few Pom seeds added) and I hope it will help me feel better. Honestly I have no idea why I'm still sick. This is 8 friggin weeks now. It's awful. :-(

How come all of the awesome antioxidents aren't kicking the flu's butt??? Hmmm???
Edit: before going to bed, hubby asked me to make him a PB&J sammie on that delicious & doughy god awful home made bread we still have from MIL to take to work for lunch. The other half of that 1/2 slice I had with my lunch on sunday was still there, so I ended up eating that with a smear of PB for another 3 POINTS of Flex - sorry no pic!

WOW! What a great food day! Your pix of those gourmet-looking meals are making me drool! Good on you for prepping and planning ahead, like you're doing! It all spells success, which you ARE! My original comment just poofed into cyberspace LOL. Whatever that illness is that went around this fall is craptastic! I remember whining about feeling awful for at least 2 months. Even though I am back to working out, and am working even harder than before, I still cough more than normal.

It looks good, just too much milk! blech! (and I love milk, just not too much in cereal!)

I have a question about your pom seeds? Do you just cut up a pomegranite and put the seeds in some tupperware or something until you want to eat them? I bought one but I don't know what to do with it!

Randi: Here's how to peel a pomegranate and yup, once I peel it, I just put the seeds in a tupperware container in the fridge and they last a really long time (if I didn't eat them, that is)

1. Don't have any clothes on that wouldn't want a squirt of pom juice to get on because it happens to me every time.
2. Cut off the nub at the top of the pomegranate to expose the seeds (just enough to see them)
3. Cut the whole thing into 4 sections.
4. fill up a bowl of water and put the pom sections in it and start working your way through them with your fingers releasing the seeds from their little sacks and separating the zesty parts. The seeds woll sink to the bottom and the zesty peel will float to the top, then you can pour the water/zety stuff off while holding the seeds in the bowl when you've got all four parts separated.

And VOILA! Oh and if you see any browny looking coloured seeds, just discard those ones because they are too ripe.

First...thank you for the thank you! bwahahahaha. ;) I just think it's nice to receive things in the mail other than bills and junk. And I was just so pleased that I got gifties and wanted to make sure everyone knew I appreciated it.

Second, woman you are on fire. Your menus just get more creative and yummy looking every day! I'm gonna have to try the chard...that's how I've been enjoying my spinach lately...sauteed...and I love beet tops like that too, so I'm sure I'll like the chard. Thanks for the ideas!
